Chinese Cabbage Kimchi

Ingredients - 1 head of Chinese cabbage 3 small Jalapeño red peppers, 1 clove garlic, 1 small onion, 1-2 tblsp sea salt

Cut the cabbage in small pieces remove the center (too hard for pickling) chop peppers, onions and garlic in small pieces - add all vegetable ingredients in large mixing bowl layer of vegetables - sprinkle of sea salt until all ingredients are in bowl - press and mix with hands or a wooden mallet until juice is expelled from vegetables - fill jars and press down with hands or a wooden utensil. allow at least 2 inches of space in the jars for expansion. set in a cool dark place and check the lids daily to release excess gasses. (3-4 days) Put away in a cool dark place for three to four weeks or in the fridge.
